杏子烘干流程:
(1)烘干初期: 杏子按不(bu)同長(chang)度進行剪柄后,排放于烘篩上,將烘篩推入烘干機烘箱(xiang)內,緊閉箱(xiang)門(men)開始啟(qi)動機器起(qi)烘。起(qi)烘溫度不(bu)能低(di)于35℃,大約是35℃起(qi)烘,濕度控制在(zai)百(bai)分(fen)之70以內,時間3小時左右,用(yong)低(di)溫來給杏子定(ding)性定(ding)色。
(2)升(sheng)(sheng)溫排濕: 溫度(du)上(shang)升(sheng)(sheng)在40℃~45℃的范圍(wei)內,濕度(du)降到百分之55,烘2小時左右,這時杏子有收縮,水(shui)分減少。
(3)強化烘干排(pai)濕(shi) :溫度(du)上升到(dao)50℃左右,溫度(du)設(she)定(ding)在(zai)百(bai)分之(zhi)35,繼續烘2小(xiao)時(shi)左右,
(4)后期高(gao)溫干燥: 溫度上升(sheng)至53--55℃,溫度降到百分(fen)之15,進行高(gao)溫干燥,實現杏(xing)子(zi)的干燥。 需要強調的是,在杏(xing)子(zi)的干燥過程中,不宜升(sheng)溫過快,每階(jie)段(duan)約5℃較為適(shi)宜,烘(hong)出的杏(xing)子(zi)含水量約百分(fen)之12。
(5)回軟: 杏(xing)子烘干(gan)完成后,不(bu)要急于裝袋(dai),可在空(kong)氣(qi)中靜置10-20分鐘,使其表面稍微回軟,否則干(gan)硬的杏(xing)子在裝袋(dai)過(guo)程中發生脆斷而被損壞(huai)。
